Pinterest and the rest of the internet got me cooking and trying all kinds of new and delicious recipes for a special luncheon I had. And nothing disappointed! Of course my lunch guests were laughing at how I was taking photos of everything we had!
Starting from the top left corner and going clockwise: Cheese and Vegetable Quinoa Bites (but I used potato starch instead of flour), Gluten Free Potato Leek Soup, Gluten Free Apricot Platz, Gluten Free Plum Platz, Sparkling Strawberry Lemonade, Massaged Kale & Craisin & Feta Salad.
I will tell you right now…I hate raw kale, but the Massaged Kale & Craisin salad changed all that! Luuuuuuuved it!

It all looks scrumptious, but to tell you the truth, after all the amazing fresh, but rich resort food and drinks, all I can fathom eating for a week is cereal, toast and some chicken soup…
So that massaged kale and craisin salad IS AMAZING! I made it to share at potluck tonight, but now I’m tempted to eat it all for my afternoon snack! Thanks for the recipe!
